INGREDIENTS

CUPCAKES:
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder

  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 2 tablespoons instant espresso powder
  • 2 cups sugar
  • ½ cup vegetable oil
  • 1 cup milk (I used 2%)

  • 2 eggs
  • 2 teaspoons vanilla

MOCHA BUTTERCREAM FROSTING
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 3½ cups powdered sugar, sifted
  • ¼ cup heavy cream
  • ¼ cup of your favorite coffee (cooled to room temperature)
  • 1 tablespoon instant espresso powder
  • 2 tablespoons cocoa powder

INSTRUCTITIONS

  1. Preheat your oven to 350 degree. Line your cupcake pan with liners or grease with butter or oil.
  2. Mix the flour, baking soda, baking powder, salt, cinnamon, nutmeg, espresso powder and sugar in a medium bowl.
  3. Vigorously whisk the oil, milk, coffee, eggs and vanilla together in a large bowl.
  4. Slowly add the flour mixture to the coffee mixture and mix to combine. Do not over mix.
  5. Evenly distribute the batter among the liners. You may need to make a second batch.
  6. Bake the cupcakes for about 25 - 30 minutes, or until a toothpick comes out clean.
  7. Allow the cupcakes to completely cool.
  8. Cream the butter until light and fluffy.

Boots, Books, and Pumpkin Spice Latte's.

It's that time of year, grab your boots, head over to Starbucks, and wait for that sweet hot savoring pumpkin spice latte (PSL).

On the other hand, if you're a lazy person and don't want to leave your house, you can make your own  PSL in just 10 minutes! Here's what you're going to do:

1. Call your local supermarket, and order the following:

  • milk
  • pumpkin puree
  • sugar
  • pumpkin spices
  • coffee/ or espresso (whatever you desire)
  • sweet whipped cream.
2. Now after you get your ingredients hop in the kitchen and start combining the milk, pumpkin puree, sugar, pumpkin spices, and vanilla extract in a bowl, and pop it in the microwave.
(make sure you cover the bowl in a plastic wrap, and theres a hole on the top)
3. Check if your milk is hot, and then start whisking it to make the foamy goodness.
4. Now it's time for my favorite part, adding the coffee (coffee freak over here), add your foamy milk.
5. Here's everyone's favorite part, add the sweet whipped cream, sprinkle some pumpkin spices.

And there you go! you'e successfully made your own PSL without having to leave your house.
Now grab your favorite book (The Girl on the Train, by Paula Hawkins), hold that hot cup of PSL and enjoy my favorite season of the year!
